Heirloom Tomato and Chicken Toss Recipe


One of my favorite things of summer is the fresh local produce that can be bought at our local farmer's markets. In the La Crosse area we have multiple farmer's markets but my favorite is the Friday evening market at Cameron Park in the downtown La Crosse area. One of the unique features of this farmers market is the community involvement. There is a park where children play, people bring chairs and lay out blankets for picnics while they watch a live band, there is even free yoga on certain Fridays. This is more than a farmer's market it is a fun event for people and families, and of course while your there you can pick up some great produce, goodies, and fresh flowers. Another great produce resource is the Kane St. Community Garden on the Northside of La Crosse. This resource offers a chance to volunteer in the garden and get first chance at the harvested produce otherwise you can come on the harvest days and jump in line to collect fresh, free produce.

Heirloom Tomato and Chicken Toss

Serve this fresh summer salad with plenty of crusty bread to soak up the flavorful tomato juices.

Yield:

Serves 6 (serving size: 1 3/4 cups)

Total time: 20 Minutes

Ingredients

4 tablespoons white wine vinegar

3 tablespoons extra-virgin olive oil

2 1/2 teaspoons granulated sugar

1 1/2 teaspoons kosher salt

1/2 teaspoon black pepper

3 cups shredded cooked chicken

2 pounds heirloom tomatoes, cut into 1/2- to 1-inch wedges

1/2 cup thinly sliced red onion

2 tablespoons chopped fresh basil

2 tablespoons finely chopped fresh chives

2 tablespoons chopped fresh flat-leaf parsley leaves

1 tablespoon chopped fresh thyme

Preparation

Whisk together vinegar, olive oil, sugar, salt, and pepper in a small bowl. Gently toss together chicken, tomatoes, onion, basil, chives, parsley, and thyme in a large bowl. Add vinegar mixture, and gently toss until thoroughly combined. Serve immediately, or cover and let stand at room temperature for up to 1 hour.
